Happy Thanksgiving!
I want to share my all-time favorite pie recipe with you. My mother always made this super easy, no bake pie for Thanksgiving. I’m making it to take a piece to her on Friday. She’s in Hospice now and not able to eat much, but she loves pumpkin like I do. We know this will be her last Thanksgiving, and even though she’s diabetic, her Hospice nurse says to let her eat what she wants.
Pumpkin Dream Pie
Ingredients:
1 package Dream Whip
1/2 cup milk
1/2 tsp vanilla
2/3 cup milk
1 package Jello instant vanilla pudding
1 cup canned pumpkin
3/4 tsp pumpkin pie spice
8-inch baked pie shell (cooled)
Cool Whip or whipped cream
Directions:
Prepare Dream Whip with 1/2 cup milk and vanilla as directed on package. Combine 1 cup Dream Whip with the Jello pudding, 2/3 cup milk, pumpkin and spice. Beat slowly with egg beater just until well-mixed — about 1 minute. Pour into pie shell. Chill in refrigerator until set — about 2 hours.
Top with Cool Whip or whipped cream.
You can also substitute a graham cracker crust for the pastry crust if you prefer.
