I thought it might be fun to post a recipe today.
Lemon Curd

Commonly served with scones and clotted cream, no Regency tea was complete without this tart, pudding-like condiment.
Think along the lines of lemon meringue pie. Yum!

Ingredients:
1 cup sugar
2 large eggs
½ Fresh lemon juice
1/4 cup butter
Directions:
- Whisk the sugar and eggs together
- Sift in the lemon juice. Cook over low-medium heat stirring constantly for 20 minutes. Do not let it boil!
- When the mixture is thick enough to coat a metal the back of a metal spoon, remove from heat and add butter.
- Pour into bowl, cover and refrigerate at least 4 hours.
